GLASS NOODLE SALAD WITH PEANUT SAUCE

It’s summer: time for easy, fresh and cold dishes. This delicious, Thai inspired glass noodle salad is simple but gives you all the flavors of summer in just a few minutes, perfect for a lunch break in the sun!

**makes 2 servings

Ingredients:

100 g Thai glass noodles

100 g smoked tofu

150 g cherry tomatoes

1 spring onion

30 g roasted peanuts

(small) handful of coriander

 

1 tbsp peanut butter

1 1/3 tbsp lemon juice

1 ½ tsp soy sauce

1 tsp maple syrup

chili flakes

Directions:
  1. Prepare the glass noodles based on the instructions, then drain and rinse with cold water.
  2. Cut the smoked tofu into small stripes, quarter the cherry tomatoes and chop the spring onions and coriander. Roughly chop the peanuts. Set aside some coriander and peanuts for garnish if you want.
  3. Mix together the peanut butter, lemon juice, soy sauce and maple syrup to a creamy sauce. Season with more soy sauce if desired and add chili flakes depending on your spice level.
  4. In a bowl, mix together the noodles, tofu, cherry tomatoes, spring onions, peanuts, coriander, and then stir in the sauce.

Garnish with coriander and chopped peanuts and enjoy!
